Most bars find out their ice machine is struggling when the bin runs dry halfway through a Friday night. Best Pro repairs modular ice machines on bins and dispensers, undercounter cubers, and flake and nugget machines for bars, restaurants, cafés, hotels and convenience stores.
Water makes the difference
What goes wrong with an ice machine here depends a lot on the tap. San Francisco and much of the Peninsula get soft Hetch Hetchy water, so scale builds slowly. The catch is chloramine: the water is treated with it, and it can give ice an off taste unless the filter is rated for it. Parts of the South Bay get harder, groundwater-blended water, and there scale is the main enemy: the same model may need descaling far more often in Santa Clara than in the city.
When the bin fills slowly
- Scale on the evaporator plate. Cubes stick, each harvest drags on, and the ice comes out thin or cloudy. A descale brings production back; the right filter keeps it from returning so fast.
- A clogged condenser. Air-cooled machines breathe kitchen air, and in a hot, greasy kitchen the condenser fins clog quickly.
- A hot room. Ratings assume 70°F air and 50°F water. In a cramped back bar, or a South Bay kitchen during a heat wave, the same machine turns out noticeably less ice. Sometimes better ventilation is the real fix.
- Not enough water. A clogged filter or a sticky inlet valve starves the machine, and the cubes come out hollow.
Other calls we get
- The sheet of ice never drops. Something in the harvest is off: the hot gas valve, the harvest assist motor or the thickness probe.
- It stops with half a bin. The bin level sensor is dirty or failed and thinks the bin is full.
- Puddles. A blocked drain, a cracked water trough, or the bin drain backing up.
- No ice whatsoever. The water pump, the condenser fan, the refrigeration side or the controller.
Cleaning and sanitizing
Ice counts as food under California’s food code, and inspectors do look inside the machine. Slime and mold grow in the water circuit even when the bin looks spotless. Most manufacturers call for cleaning and sanitizing at least twice a year, more often in a busy kitchen, and we offer it as a maintenance service.
