A dish machine that stops mid-service leaves the line out of plates and the bar out of glasses inside an hour. Best Pro repairs undercounter, door-type and conveyor dishwashers and glasswashers for restaurants, bars, hotels, schools and corporate cafeterias, usually the same day.
How your machine sanitizes
Hot-water machines rely on a final rinse of about 180°F. When the rinse comes up short, nothing is being sanitized, and an inspector will notice. The usual cause is the booster heater: an element that has burned out, a thermostat that has failed, or a heater crusted with scale. A rinse that isn’t flowing hard enough does the same.
Chemical machines sanitize with chlorine or a similar product. If the sanitizer or rinse-aid pump stops feeding, dishes come out looking clean without being sanitized. We test the pumps and the tubing; dispensers owned by your chemical company are serviced by them.
Other trouble spots
- Cold wash tank: the tank heater, its thermostat, or a low-water safety that has tripped.
- Won’t fill, or won’t stop filling: the fill solenoid, a stuck float, or a blocked inlet strainer.
- Water sitting in the machine: a drain valve that’s stuck, a drain pump that’s quit, or debris. In older San Francisco buildings, a slow floor drain or a full grease trap can push water back into the machine.
- Spotty or dirty dishes: scale in the wash and rinse arms, a weak wash pump, a tank that isn’t hot enough, or a torn curtain on a conveyor.
- Conveyor not moving: the drive motor, a jammed pawl bar, or a safety switch that has opened.
Water and deliming
Scale coats the booster, the tank and the arms and slowly costs you both heat and cleaning power. How fast depends on the water. On soft Hetch Hetchy water in San Francisco and much of the Peninsula it’s slow; on harder water in parts of the South Bay, a machine may need deliming every few weeks. We set the maintenance schedule to match.
