Restaurants, bakeries and cafés lean on their convection ovens for everything from sheet-pan vegetables to the morning pastry case. When one bakes unevenly, the whole batch goes in the bin. Best Pro repairs gas and electric commercial convection ovens — full-size and half-size, single and double stack.

Start with the fan

A convection oven is built around its blower. If the motor fails, or the fan wheel slips on its shaft, heat stops circulating and one corner burns while another stays pale. On many models the safety circuit won’t even let the burner or elements come on without the fan. The door switch also matters: it stops the fan and the heat when the door opens, and when it wears out, the oven can stay cold after the door closes.

No heat, slow heat

  • Gas: igniter or pilot, a dirty flame sensor, the gas valve, or the combustion blower.
  • Electric: elements, and above all contactors. They switch heavy current all day, and pitted contacts are a classic reason an electric convection oven heats slowly or not at all.
  • Either: a thermostat that has drifted out of calibration, or a high-limit that has tripped.

One side paler than the other?

Check the doors first. Many convection ovens have two doors tied together by a chain or linkage. When the chain stretches or a hinge wears, one door hangs slightly open and heat leaks out on that side. Worn door gaskets do the same.

Early-morning bakeries

Bakeries and cafés load their ovens before dawn. An oven that won’t come up to temperature at 5 AM can wipe out the morning case. If yours has been slow to preheat or cycling oddly, call during business hours before it quits on a bake day.

FAQ

Convection Oven Repair: common questions

One side of the pan always comes out paler. Why?

Usually a door that doesn’t close tight — a stretched door chain, a worn hinge or a flattened gasket. A fan wheel that has slipped on its shaft does the same.

The fan runs but the oven won’t heat. What’s wrong?

On gas ovens, look at the igniter or pilot, the flame sensor and the gas valve; on electric ones, the elements and the contactors. A tripped high-limit switch stops both.
